Vanilla Cupcakes with Buttercream Frosting

These vanilla cupcakes are the easiest little sweet treat to snack on or just pop in your mouth. The fresh buttercream paired with the softness of the cake is just too addicting!

Ingredients for the Cake
  • 3/4 cup sugar

  • 2 cups flour

  • 2 large room temperature eggs

  • 1 cup milk

  • 1 tsp vanilla extract

  • 2 tsp baking powder

  • 1/2 cup (1 stick) room temperature butter

Ingredients for the Buttercream
  • 1 cup (2 sticks) room temperature butter

  • 5 cups powdered sugar

  • 1/4 cup heavy cream

  • 1 tsp vanilla extract

Recipe
  • Preheat oven to 375 degrees F.

  • Beat the eggs and sugar until fully combined and sugar is dissolved.

  • Slowly, add in the eggs one at a time.

  • In a separate bowl, whisk together the flour and baking powder.

  • Add the flour and the milk in alternating motions. For example, add a little bit of the flour, then the milk, then the flour, etc.

  • Divide evenly among a cupcake pan.

  • Bake for16-18 minutes or until a toothpick comes out clean.

  • For the frosting, combine the butter and powdered sugar and beat on high. Add in the heavy cream and vanilla extract and set aside.

  • Wait until the cakes are completely cooled down before adding the icing.

  • Add the buttercream to a piping bag and ice the cupcakes. Enjoy!
