
Chocolate Cake with Berry Toppings
This chocolate cake is the perfect mix of sweet and tart. The fluffy chocolate from the cake and the creamy chocolate from the frosting tie in perfectly with the sweet and tart berries on the top, creating the ultimate sweet treat.
Ingredients for the Cake

2 cup sugar

1 3/4 cups flour

3/4 cup cocoa powder

2 large room temperature eggs

1 cup milk

2 tsp vanilla extract

1 1/2 tsp baking powder

1 1/2 tsp baking soda

1 tsp salt

1/2 cup vegetable oil

2 tsp instant coffee

2 tsp warm to hot water
Ingredients for the Frosting/Topping

1 1/2 cup (3 sticks) room temperature butter

1 cup cocoa powder

5 cups powdered sugar

1/4 cup heavy cream
-
1 tsp vanilla extract

1 cup mixed fresh fruit (strawberries, blueberries, raspberries)

Powdered sugar to dust (optional)
Recipe

Preheat oven to 350 degrees F.

Whisk together the flour, baking powder, baking soda, and cocoa powder.

Slowly, add in the eggs, milk, oil, and vanilla.

In a small glass, mix together the instant coffee and warm or hot water until the grinds are dissolved.

Pour in the coffee and mix until everything is combined.

Take two round 8-inch pans and divide the batter evenly into two.

Bake for 30-35 minutes or until a toothpick comes out clean.

For the frosting, combine the butter, cocoa powder, and powdered sugar and beat on high. Add in the heavy cream and vanilla extract and set aside.

Wait until the cakes are completely cooled down before adding the icing.

Once the cake is covered with frosting, add the fruits to the top, dusting with powdered sugar if needed. Enjoy!
