Key Lime Pie

Recipe :

  • 1 ½ cups crushed graham cracker crumbs (from 12 graham crackers)

  • â…“ packed light brown sugar

  • 5 tbsp melted butter

  • Two 14-oz cans of sweetened condensed milk

  • 1 cup plain Greek yogurt

  • 1 tbsp grated lime zest

  • ¾ cup lime juice

​

  • Whipped cream

  • Thinly sliced lime

For the crust:

  • Preheat oven to 375 degrees F

  • In a bowl, combine the brown sugar, melted butter, and graham crackers with you hands

  • Once fully combined, use your fingers or a flat object to press the crumbs into your pie pan. 

  • Bake for 10 minutes until it is slightly browned. (If making mini key lime pies, bake for 5 minutes)

  • Once done, let the crust cool.

For the filling: ​

  • Lower the temperature of the oven to 350 degrees F

  • In a large bowl, whisk together the lime zest, lime juice, sweetened condensed milk, and yogurt. 

  • Pour the mixture onto the cracker crust and bake for fifteen minutes (if making mini key lime pies, bake for seven minutes), or until the mixture is slightly set.

  • Cool at room temperature for thirty minutes, then place in the fridge for 3 hours to chill.

For the topping:

  • Use whipped cream and thinly sliced lime pieces to decorate.
