Ingredients:
-
1.5 cups of strong coffee
-
¾ cup dark rum
-
Two 8 oz packages of mascarpone, 16 oz
-
6 large egg yolks
-
â…” cup sugar
-
2 cups heavy whipping cream
-
2 tsp vanilla extract
-
40 ladyfingers
-
â…“ cup unsweetened cocoa powder
Recipe :
-
Stir the coffee and ½ cup of the dark rum
-
In a large mixing bowl, combine the mascarpone with the rest of the ¼ cup of dark rum
-
Setting that aside, bring a pot filled with around 2 tbsp of water to a boil, placing a heat-safe bowl on top. Combine the egg yolks and sugar, whisking constantly, or until the sugar has dissolved and the mixture is a pale yellow.
-
Combine the egg mixture with the mascarpone and whisk. Place the mixture in the fridge for fifteen minutes to cool.
-
Whisk together the heavy cream and butter until light peaks are formed to make whipped cream. Do not overmix or you will make butter.
-
Fold the whipped cream into the mascarpone mixture
-
To assemble, dip the top and bottom of the ladyfinger into the coffee and rum mixture. Do not completely soak. Each side should only be soaked for 1 or 2 seconds.
-
Place the soaked ladyfingers into a 9x13 in dish.
-
Add half the mascarpone filling and smooth out the edges. Repeat the ladyfinger process and arrange them on top.
-
Add the rest of the mascarpone mixture and smooth out the top with a spatula. Dust the top with cocoa powder and chill overnight.
